So it is Tuesday again and I thought I'd post another picture. I am putting both the 1st day and today to show the difference. Hopefully you can see the results so far. Not too shabby...
Grilled Chicken on Melba toast -3.5 oz. piece of chicken grilled with salt and pepper -1 roma tomato sliced -thinnly sliced red onion -juice of 1/2 lime -1 melba toast
Layer the tomato and onion in the toast. Top with the grilled chicken and the lime juice. Delish! Salt and pepper to taste.
Chicken and Zucchini Soup -3.5 oz chicken -minced garlic -1/2 cup zucchini thinnly sliced -3 c. water -lots of pepper
Boil everything together until the chicken is cooked thru and the zucchini in tender. Shred chicken and back to the soup. Enjoy!
